Asparagus and Pine Nut Chicken Salad

4 cups cut asparagus

6 oz. skinned, chopped chicken breast

¼ cup chopped fresh parsley

2 Tbsp. toasted pine nuts

1 tsp. basil

2 Tbsp. balsamic vinegar

2 tsp. olive oil

¼ tsp. salt

¼ tsp. black pepper


Steam asparagus until crisp and tender. Drain and set aside.

Coat medium skillet with cooking spray; add chicken and cook until lightly browned.

Combine asparagus, chicken, parsley and pine nuts in a large bowl.

Mix basil, balsamic vinegar, oil, salt and pepper in a small bowl; stir well with a whisk.
Pour over asparagus mixture and toss.
