Chicken Pasta Salad



2 3-oz. chicken breasts, boneless and skinless,

trim off fat

3 cups ziti pasta (wheat if available)

1 cup jicama

1 cup mandarin orange sections

1 cup red bell pepper, seeded and diced

½ cup almonds, cut into slivers

2 Tbsp. fresh cilantro, chopped

1 cup nonfat plain yogurt

2 Tbsp. molasses

1 Tbsp. frozen orange juice concentrate

¼ tsp. mustard seeds, crushed

1 tsp. fresh black pepper

romaine lettuce



Cook pasta according to package directions. Drain, rinse with cold water, drain again.

Grill chicken breast 10 minutes on each side, or until cooked through. Allow to cool slightly and cut into small cubes.

In a large mixing bowl, combine pasta, chicken, red bell pepper, jicama, orange sections, almonds and cilantro.

In a separate bowl, combine molasses, yogurt, orange juice concentrate, mustard seeds and pepper. Pour over pasta mixture and toss to coat.

Serve on a bed of the Romaine lettuce.
