Chicken With Whole Wheat Pasta and Carrots



cooking spray

1 13¼-oz. pkg. whole wheat spaghetti, dry

1 cup chopped onion

2 cloves garlic, minced

1 tsp. thyme

1 tsp. salt

1 tsp. pepper

4 3-oz. chicken breasts, boneless, skinless, sliced

½ cup carrot strips

½ cup chopped green bell pepper

¼ cup mozzarella cheese, shredded



Cook spaghetti according to package instructions.

Coat a nonstick skillet with cooking spray over medium heat. Add onion and garlic, and cook until onions and garlic are softened. Sprinkle thyme, salt and pepper over sliced chicken breasts and cook for 10 minutes. Add carrots and bell pepper, and cook for 10 minutes or until chicken is cooked through. Serve pasta; add chicken mixture and top with cheese.
