Ingredients

3 Tbsp. balsamic vinegar

1½ Tbsp. olive oil

1 clove garlic, minced

2 cups tomatoes, chopped

¼ cup red onions, chopped

1 15-oz. can garbanzo beans

2 cups plain croutons

1 tsp. dried cilantro

1 tsp. oregano

¼ cup romano cheese, shredded

 

Directions

Combine first 3 ingredients (balsamic vinegar through minced garlic) in a large bowl. Add tomatoes, onions, garbanzo beans, croutons, cilantro and oregano; mix together. Sprinkle with romano cheese.
