Oatmeal and Almond Cookies

Oatmeal and Almond Cookies 5-27-2014


1¾ cup all-purpose flour

¼ cup whole wheat flour

½ tsp. salt

1 tsp. baking soda

1 tsp. cinnamon

½ cup margarine or butter, softened

½ cup packed brown sugar

2 eggs

1 cup unsweetened applesauce

1 tsp. almond extract

3 cups old fashioned rolled oats, raw

½ cup whole pitted dates, chopped

¼ cup chopped almonds




Preheat oven to 350 degrees.


In a large bowl, beat sugar and margarine or butter together until smooth. Add eggs,
applesauce and almond extract. Beat well.


Mix together flour, salt, soda and cinnamon.


Add slowly to sugar and margarine or butter mixture. Mix on low speed until well combined. Stir in oats, dates and almonds.


Drop by slightly rounded Tbsp. onto nonstick baking sheets. Bake at 350 degrees for 12 to 13 minutes or until lightly browned. Cool two minutes on sheet. Remove and cool on wire racks.
