Cucumber Dip

1½ cups low-fat plain-yogurt, drained
3½ Tbsp. garlic, minced
¾ cup cucumber, peeled, chopped
½ tsp. olive oil
1 Tbsp. fresh dill, chopped
1 Tbsp. white pepper

To drain yogurt, place in coffee filter and drain over a cup for three hours. Discard liquid in cup. Put all ingredients, except cucumber, into blender or food processor, blend for two minutes until creamy. Add cucumber and blend one minute. Add seasonings to taste. Cover and refrigerate.

Serve cold with warm pita bread, olives, or vegetables.
