Greek Pasta Salad_Large

Ingredients

4 cups vermicelli pasta, cooked (look for whole wheat or spinach)

½ cup whole black olives

1 cup sun-dried tomatoes, chopped

1 Tbsp. extra-virgin olive oil

1 Tbsp. red wine

½ tsp. red pepper, crushed

1 cup fresh basil, whole leaf

2 Tbsp. garlic, minced

¼ cup feta cheese,

crumbled

 

Directions

Combine all ingredients, except cheese, in a large mixing bowl and allow to stand for 15 minutes. Divide among four serving plates, top with feta cheese, and serve.
