TOFU BEER BURRITOS

Tofu Beer Burritos_Medium

Ingredients
1 10 1/2 oz. package extra-firm tofu, drained and cut into cubes
1 tsp. ground cumin
1 tsp. chili powder
2 Tbsp. beer
2 tsp. vegetable oil
1 cup sliced onions, separated into rings
1 cup julienne-cut red pepper
1 cup julienne-cut zucchini
1/2 cup salsa
4 8-inch fat-free whole wheat tortillas
1/4 cup sliced green onions
1/4 low-fat sour cream
1/4 cup shredded reduced fat jalapeno jack cheese

Directions
Place tofu in a shallow dish. Sprinkle with cumin, chili powder, and beer. Toss gently to coat; set aside. Heat oil in a large nonstick skillet over medium heat. Add onion; saute 2 minutes. Add bell pepper and zucchini; saute 4 minutes. Stir in tofu mixture, salsa; cook 2 minutes, stirring occasionally. Remove from heat. Warm tortillas according to package directions. Spoon about 3/4 cup tofu mixture down the center of each tortilla. Top with 1 Tbsp. each of green onion, sour cream, and cheese; roll up.
