PEACH AND WALNUT CRUMB CAKE

Fresh Peaches_Large

Ingredients
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 packed brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/2 cup low-fat buttermilk
1/2 cup sliced peaches
1 Tbsp. stick margarine, melted
1 large egg
1 large egg white
cooking spray

Topping
1/3 cup chopped walnuts
1/3 cup all-purpose flour
1/4 cup packed brown sugar
2 tsp. stick margarine, melted
1/2 tsp. ground cinnamon

Directions
Preheat oven to 350 degrees.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through nutmeg) in a large bowl; make a well in the center of the mixture. Combine peaches, 1 Tbsp. margarine, egg, and egg white in a bowl; add to flour mixture, stirring just until moist.

Spoon batter into 9-inch round cake plan coated with cooking spray. Combine walnuts and remaining ingredients in a small bowl. Stir with a fork until the mixture resembles coarse meal. Sprinkle evenly over top of cake. Bake at 350 degrees for 35 minutes or until a wooden toothpick inserted in the center comes out clean.
