FALL MORNING MUFFINS

Pumpkin Cranberry Muffins_Large

Ingredients
1 cup pumpkin
2 cups fresh cranberries, chopped
1/2 cup spiced applesauce
1 1/2 cups all-purpose flour
1/4 cup whole wheat flour
1/2 cup light brown sugar
1 tsp. baking soda
1 tsp. cinnamon
1/4 cup nonfat milk
1/4 cup honey
1/4 cup egg substitute

Directions
Preheat oven to 350 degrees and spray a nonstick muffin pan with cooking spray.

Combine liquid ingredients (applesauce, milk, honey, and egg substitute) in a small bowl. In a separate medium mixing bowl combine dry ingredients. Stir liquid mixture in with the dry, just until mixed (batter will be lumpy). Fill 12 muffin cups. Bake 30 minutes, or until golden.

Remove muffins from tin and allow to cool.
